I'm a Canadian grade 11 student and literally no schools in my area offer ap classes, however my school is the biggest in the city and we uniquely have "enriched" classes that are a higher difficulty than the academic level. Apparently at my school, if you continue with enriched classes, you can take the related AP exam in senior year. There aren't many options though, only AP bio, physics, English, and French. I only plan on writing ap physics at school, but I also want to write ap chem and calculus ab. Is it possible to write them outside of school? And does what I have here still work when applying to top schools?

That's okay! Colleges will not hold a school issue against you as long as you are academically challenging yourself. I think the enriched classes will do the job, but you might want to see if you can get a letter or document from your school principal, teacher, or board that explains clearly how much harder these classes are (Take that with a grain of salt, I'm not entirely sure about how international works).
As for taking the AP exams, it is possible to self study these and take them at a testing center if available. You will have to register using College Board's instructions for this. Fair warning tho: AP Chem is another breed of difficult and is really REALLY hard to self study. You should either get help from teachers or other students who have taken the class to perfect AP Chem, or just pick another exam to self study.
