I would like to know if there are schools for human rights officer

I have never heard of the term "human rights officer" and I am planning on majoring in poli-sci/international relations or something business-related!

If you want to become a human rights lawyer, then you will have to go to law school. Going to a prestigious (T14 ideally) law school will help quite a bit. Top law schools don't care much about where you went to undergrad. As long as you do well (high GPA + LSAT), have good extracurriculars/work experience/internships, and that you don't go to a school like the University of Phoenix, you will be okay.

If you want to be a foreign service officer (or something similar), then it is different. Ideally, you would want to go to a prestigious school (Georgetown, Ivies, Stanford, GW, American University, JHU international relations, NYU, etc.). Prestige isn't everything. You may want to get an advanced degree (probably a master's degree) in a related subject. Additionally, you should be bilingual (at least!) if you want to be an FSO or something.
