Extra-curricular suggestions for students in diverse high schools

Hey, everybody! I'm attending what's said to be the most diverse high school in Los Angeles. While I love the mixed culture and learning about different beliefs and walks of life, I am unsure of what extra-curricular activities would add value to my college application from this perspective. Any advice?
