Liberal Arts, such as English or History, have less stringent and demanding curricula compared to STEM subjects. They can afford quite a bit of flexibility and freedom, allowing students to explore a broad range of topics. Careers subsequent to these degrees can be in education, publishing, journalism, etc.
Also, have you considered cross-discipline fields? For example, Health Administration brings together business and healthcare, and offers relatively less hectic coursework than medical or health sciences, while still providing stable job opportunities in healthcare management.
