How soon should I start working on my college essay?

Hi all, I'm currently a junior and I've heard that it's a good idea to start working on my college essay early. When do you guys think is the best time to begin? Should I start over the summer, or should I wait until senior year begins? I want to make sure I have enough time to write a great essay without feeling rushed. Thanks for any advice!
