How important are AP courses when applying to college?

Hey guys, so I'm a junior and my school only offers a limited number of AP courses. I'm only taking one right now, and I'm worried that it might not be enough for top colleges. Do you think colleges will understand that I had limited options or will it negatively impact my chances?
