If you're interested in pursuing a culinary degree in California, there are several outstanding programs that you should consider:

1. Culinary Institute of America at Greystone: Known internationally for its culinary and baking programs, this institution located in the Napa Valley offers a variety of degrees including culinary arts, baking & pastry arts, and wine business management. The institution's offerings are varied, ranging from associate's degrees to bachelor's.

2. California Culinary Academy in San Francisco (part of Le Cordon Bleu): While it's a part of the internationally renowned Le Cordon Bleu, the program also places a focus on local and sustainable food practices. It offers diploma and degree programs in culinary arts and baking & pastry arts.

3. The International Culinary Center (ICC) in Campbell: In the heart of Silicon Valley, this school offers fast-paced, intense programs that can get you working in professional kitchens in six months. Courses offered include Professional Culinary Arts, Professional Pastry Arts, and a Cake Techniques & Design program.

4. Los Angeles Trade Technical College: This public community college in downtown LA offers an Associate in Science in Culinary Arts. The program focuses on practical experience and includes an internship in addition to courses in cooking, baking and restaurant management.

Remember to choose a program that not only has a strong curriculum but also aligns with your long-term career goals. I recommend taking the time to tour campuses, meet with mentors or professors, and speak with recent graduates if possible. Doing this research could give you more insights into how well each program can support your specific goals in culinary arts.
