Hello, I'm a high school student also looking to complete a passion project as someone interested in the medical field! After doing some research I've discovered that a really great way to show dedication to your major is by writing/publishing an essay on a forum or website for high school scholars. You can get these essays peer-reviewed by professors or university students, which can also help you build connections with people in your field! Plus, they look great on your college applications. You could open a research project such as finding the health risks of certain foods. Maybe even have a passion project to teach health and medicine to underprivileged communities.

I suggest connecting with like-minded high schoolers on LinkedIn, and DMing them, offering them the opportunity.

I've been looking for such places myself!
