I'm a confused international student applying to universities in the united states. I have good test scores but my activities are slacking.
I think you could do courses to improve skills, plenty of them through Coursera, EdX, etc. Finding a mentor to pursue an independent research project is also good, as long as you have a consistent story and the subject is of your interest, and better off, if related to your academic interest in college. There are also other things like fundraising to help others during these difficult times.
Whether it is in presence or online will not matter as many countries are undergoing a severe 2nd wave with no vaccines available, so the best solution is to be creative and engaged and show you care.
There are virtual volunteering that you can participate in! I recommend VolunteerMatch! There are different activities you can do there and I am sure you can find your passion there! You can also start a virtual club yourself or do a passion project.
