I wanna participate in a couple of renown writing workshops, but would colleges actually even care about them?

I think it depends on what your other extracurriculars are. If you are part of your schools newspaper, or if you do something else involving writing, it would show that you pursue different opportunities to improve your writing. As long as you’re showing dedication to your interests, It would look good on an application. Even if it didn’t, writing is such an important skill and would help you across the board academically. I say if you want to, go for it.
