Subjects without IB or AP Classes?

I am a student in New Zealand and our curriculum is NZQA which is different from the AP or IB classes and are not available for the simulator.

I was wondering how much this will affect my application?

It definitely won't affect your application. Admission officers evaluate students according to the curriculum of their high school. If you have taken rigorous coursework in your curriculum and have good scores, you have a high chance of getting into the colleges you apply to.

NOTE: Do not compare your curriculum with AP or IB courses.

College admission officers know your region and the curriculum offered there. So they evaluate your application to mainly the people in your region that have been offered the same opportunities as you.
