How important is it to get a LOR from a STEM subject teacher if my courses in high school are Business, Accounting, Economics, and Math, and if I want to pursue Business in college?

Not particularly. You need letters of recommendation from any major subject teachers (languages, math, science, etc.) Colleges do not want someone who is only good at one subject...
