I think in hindsight my first answer need to be modified to say, you should decide where you want to apply, and then focus your efforts on the harder school.

There are some essays that are repeatedly asked by multiple schools, like the "why this major" essay or the extracurricular essay. For such prompts, you can write one essay and use it in different college applications.
For example, both Columbia and Syracuse have a diversity essay so you can just write one essay and submit them for both. You will have to modify the Syracuse essay a bit as it asks you why you are interested in attending it as well.
Also, both Syracuse and Columbia ask for a why this college essay, which is quite easy to write. For this essay, you just have to go to the college's website use the information given there to write it. Choose a club, internship program, or academic course and say you want to participate in them. DON'T FORGET TO MENTION WHY. The reason is very important. You could also mention a few traditions you would like to participate in and why. If you cannot find what you are looking for on the website, use the search.
That's all. Thank goodness you have only Columbia and Syracruse left to write as, when compared to some other colleges, their essays are pretty easy to write, even if they look intimidating. So, don't freak out. You might feel that you are not going to be able to finish the essays in time but you can and you will.
