I am applying to my dream school within a few days but I would like to write a letter to my admissions counselor after I submit it. I want to just state my interest (like that I have visited twice) and a general introduction and update about myself. I would try to bring in new information not already on my application. My question is since it is such a selective liberal arts school would it really matter or even hurt me to send them an email (since it is so selective but at the same time has a number of applicants in the thousands)?

I would definitely not send an email because, despite your interest, it comes off as needy/begging (the last thing you want to do is annoy the people that could get you in), and there's no real need to give them more information unless they explicitly ask you. New information rarely even helps the admissions decision anyways. If it is really big, you can just update your application on the college's application portal. Good luck!
It never hurts to send an email but be careful what you say. Keep it simple and don't go overboard. If anything it will help the counselor be familiarized with your name.
It will absolutely not hurt, and that is actually a part of demonstrated interest! My one piece of advice is to not send emails every other day, because that can get a little bit annoying for admissions counselors.
