I'm not very involved in school activities and I want to get more out there. I plan on going into mechanical or aerospace engineering. My school is having a club rush soon and I was thinking of starting some sort of club to do with engineering. Any ideas about extracurriculars or the club?
Try starting a robotics team! As long as you can get the funding from your school, I think it would be a great idea to get some supplies from VEX robotics or another company and to experiment with building and programming different types of robots.
I would also highly suggest joining your school's local Science Olympiad team as well. If they don't have one, start one! It's a very fun and enriching extracurricular.
See if your school has a STEM team. In those competitions, there will be these types of scouts, but not for college, for jobs. These people will see your performance and may offer to pay for your education and a guaranteed contract for a few years in their company.
In my school, Rocketry club is really popular. It's in the name, but basically, you build and launch rockets, and enter the American Rocketry Challenge. Here's the link for it: https://rocketcontest.org/
The President of our Rocketry club last year actually went to go study aerospace engineering at Berkeley!
Other good clubs are robotics or STEM club.

Do you know if your school provides vocational classes? A vocational class in engineering would be an amazing place to start.
