is there anything good i can do over the summer to boost my college chances at this point?
I've attended several virtual college admission sessions. I noticed that the common answer to this question from the colleges such as Duke, Harvard, and MIT is they aren't looking for specific type of activities, rather they want to see what your interests and passions are. There are no right or wrong activities. Your extracurricular activities should reflect what is meaningful to you. How has the activities enriched yourself, and your community? Be true to yourself. When it comes time to write the essays, you'll be able to write a compelling story. Essays have a significant wait in the admissions process.

My college counselor has suggested that I take a few classes on Coursera over the summer to boost my resume. There's a HUGE selection of courses to take ranging from the basics, like psychology and business, to more specific courses, like interior design or photography.

As someone else mentioned, do courses on Coursera. They are pretty expensive, but I believe you can apply for financial aid. Also, do some on LinkedIn learning as well. There’s a 1 month free trial, and then $30 a month afterwards. Great way to spice up your LinkedIn profile, for a much cheaper cost than Coursera.
Get an idea of what you want to major in, and do an internship or research project with a local community college professor about the subject matter. Only volunteer if it actually has significance to you or creates a story about what you will be doing in college. Colleges can see if people are just volunteering for college admissions.
