I asked my AP History teacher if she could help write a letter of rec for me and she agreed later that day (May 27). Since it is during the summer, I was wondering if I should check up on her in a few days (June 27) or just wait to check up with her on August 1st (when most college apps open up)? I just want to make her feel like I'm not in a rush.
Also any tips on writing the email for check-up?

Wait until August because most teachers are on break during summer, UNLESS, you are applying during the summer in which case you need the letter urgently. However, if you're applying during the regular admission rolls (ED, EA, RD) then you should wait. Don't fret!
I was thinking about the same thing for this summer, since I asked two teachers, who agreed, for their letter of recommendation. Definitely wait until the beginning of the school year, because they probably won't be checking their emails regularly and will have some time off too. Also, if they already agreed to write you a rec. letter then checking up isn't as urgent.
As for writing the check-up email, I would start light and then get into how they agreed to write you a letter, and talk about how their teaching/class has helped/benefitted you. Also if your school doesn't require you to fill out a form (with things about you/your extracurriculars) for your teacher to write about, definitely mention a couple activities you participate in for your teacher to include and show you're a well rounded student.

Well most of your tips for checkup email, I’ve already wrote in my email asking her to write the letter for me such as how her teaching benefited me and my activities that was part of my resume I’d given.
