I'm a rising junior who is not a US citizen but hoping to school in the US.
I hope to study environmental engineering engineering and I don't really have extracurricular. Any suggestions on what to do or any courses I can partake in.

In my unprofessional opinion, clubs/classes that relate to your potential major are always great and show your passion for that area of study. Does your school have some sort of eco or STEM club? Maybe an environmental science class?
However, it's important to also be well-rounded and to have fun while you're still a teenager. Consider joining a club or sports team just because it sounds interesting and could be a fun experience. Having several different interests/passions can look good on an application as well!
Finally, colleges definitely look for students with good character and leadership skills. Maybe you could start a club at your school or elsewhere in your community. This shows initiative as well as creativity. Community service also looks good on college applications.
Whatever you choose, just do something! Extracurriculars show dedication, hard work, and passion, all of which will look great on your application (not to mention whatever you join will hopefully bring some good memories and laughs into your present life!).

Since you are already a junior you should try to join as many things as you can, especially in the stem subjects. However, try to find something that is really unique, and something that you like to do and spend time getting good at it. So when the time comes you can write about that in your essay, or list it as an unique or impressive extracurricular. Best of luck to you!
