Most colleges only want to see at least 2 years of a foreign language in high school(9th-12th grade, 8th won't count). As long as you satisfy that requirement, you should be fine.
I'd say to try taking them in consecutive years if you can, mostly so that you can retain the information you learned. If that's not possible, it should be fine to take them two years apart.

It counts as high school credit, so I took Spanish 1 in 7th grade, and Spanish 2 in 8th grade. I would still take Spanish 3 in high school.
