So you've mentioned that you're a state board student which actually isn't that beneficial. Try to go for CBSE if you can since it's recognized by the Central Government. Nonetheless, if we're talking about hardest courses within your school, you should keep these factors in mind:
1. It doesn't matter if your course is the hardest e.g. Science/Math. If you are not fond of your subject you won't score good which means there is no point selecting such course. If you have an interest in STEM, go for it!
2. Try to shift equal attention between scholastic and non-scholastic work since top colleges in India, USA, UK etc. look for an all-rounder student.
3. You are in 10th and have 2 years to build a strong profile. Try to indulge in leadership activities. If you're academically oriented, go for olympiads or state/national level competitions.
4. Score leadership roles as they're one of the most crucial things required by top colleges. Try to gain a lead position in Student Council, Club President etc.
5. Believe in yourself. If it is meant to be, it will be. Don't stop grinding and working as much as you can.

HI, I think if you have the resources you should take the SAT's and AP exams - they are also available in India (I'm from India my self). You can also opt for goverment exams - like homibaba exam - and olimpiads. And in all this process don't for get to maintain your highschool GPA also.
