It's great that you're already involved in the French Club and have plans to join various honor societies. Extracurricular activities can be an excellent way to not only explore your interests but also to build a well-rounded profile for college applications and personal growth. Here are some other extracurricular activities you might consider:

Student Government: Joining your school's student government or student council can provide you with valuable leadership experience and a chance to make a positive impact on your school community.

Sports or Intramural Teams: If you enjoy sports or physical activities, consider joining a school sports team or participating in intramural sports. Team sports can teach teamwork, discipline, and time management.

Community Service: Volunteering for local nonprofits or community organizations can be a rewarding extracurricular. It demonstrates your commitment to community betterment and can help you develop empathy and leadership skills.

Arts and Music Clubs: If you have an interest in art, music, or drama, consider joining a related club or participating in school productions or art exhibitions.

Debate or Speech Club: These clubs can help improve your public speaking and critical thinking skills. They also look impressive on college applications.

Science or Math Competitions: If you have a strong interest in science or math, consider participating in science or math competitions, such as MathCounts or Science Olympiad.

Academic Bowl or Quiz Bowl: These competitions focus on general knowledge and can be a fun way to challenge yourself academically.

Coding or Computer Science Club: If you're interested in technology, joining a coding or computer science club can help you develop valuable technical skills.

Environmental Club: If you're passionate about the environment, consider joining an environmental club or participating in initiatives related to sustainability and conservation.

Foreign Language Clubs: In addition to French Club, consider exploring clubs related to other languages you might be interested in learning.

Yearbook or School Newspaper: If you have an interest in journalism, writing, or photography, these clubs can be a great way to get involved and build your portfolio.

Business or Entrepreneurship Club: If you have an interest in business and entrepreneurship, joining a related club can provide opportunities to learn and even start your own projects.

Remember, it's not just about the quantity of extracurricular activities but the quality of your involvement and what you learn from them. Choose activities that genuinely interest you and align with your passions and long-term goals. Also, don't forget to balance your extracurricular involvement with your academic responsibilities and personal well-being.

It's great that you're in extracurricular activities but you could always try something new. Are there any other extracurriculars at your school that you like? If so then go for one of them.

Although I'm not the most credible source, being perfectly honest, honor societies on your EC section is not that overwhelming although it's a great idea to join a few. Given that you school and some of the programs and competitions it provides students are unavailable to me, I'd just go with a number of volunteering hours as earning school honors for it.

joining honor societies was never meant for ECs as it is super cliche and everyone is in one or two subject level ones. The aim is to ask for advice from members that are your upper classmen. By simply join NJHS and SNHS, I've gotten handful of competitions, private and hidden programs/unexposed stuff in school. Also, getting in touch with a few members is super helpful when you do university planning, course choosing, further consultation, etc.
