Technically, both my parents are from India. But, my dad is from a specific nomadic community that descends from Georgia, Iran, Pakistan, and India. My mom is from the same community (a different state), and her descent is mostly Indian and some central Asian. I’m really confused, especially since my first name is Sanskrit and my last name is French/English. Should I check Asian, multiracial, or other?

I had a similar issue as you, my grandparents lived in Pune, India (before 1947), then migrated to Dhaka (known as East Pakistan at the time), and finally to Pakistan (post-Bangladesh Independence). I still put Pakistan (whenever specifically asked), since most of my values and beliefs were shaped by Pakistani culture.
My advice is to pick whichever one best reflects you and shapes you. Again, if inquired by unis or college board, you can easily justify it by referencing to the nomadic community. Also, I wouldn't overthink it, since recently, laws have been placed to discourage segregation according to race in uni application (there is a post on College Vine as well).
One thing you can do is talk about your mixed cultural outlook in one of your supplementals (or even the common app essay), which will enhance your profile. Best of luck :).
