I heard extracurriculars are crucial for admission, and these are the extracurricular activities I have done so far:
1. Competed in an international level MUN
2. Won 1st place in an international English speech competition about policies
3. Our team won a science olympiad and got a minister's award
4. I won a school-level science fair
5. I have multiple certificates in Coursera about technology(ex. Python, C)
6. I am in a band, and I am the school's first flutist
7. I am a member of the NHS
8. I am a secretary in StuCo.
So this is what I have done, and I am a sophomore. What additional things would help me in strengthening my list of extracurriculars?

My advice is always to simply do what you love! If your ECs are based on your interests, the college admission officers will look at your application and see your passion. This is highly appealing!
The other tip I have heard over and over is QUALITY OVER QUANTITY. If you are participating in a few things over several years, it proves your commitment more than and bunch of this and that.
