Does taking ap science classes junior and sophomore year, but not senior year, look bad for engineering college apps

Hello! I’m a sophomore in high school, and I fought to be the only sophomore ever allowed to take AP science in my school ( AP Environmental Science). However, this class switches with AP Bio each year, so that means my senior year will leave me with APES as my only option for an AP science class. Obviously, I cannot repeat the class. And as for senior year science, my only choice is to take college level astronomy one semester then college level geology the next. I will literally max out ap sciences in my school. As a hopeful future engineering student in a top 20 college, I want my chances of admission to be as high as possible. My question is, will taking a simpler science course my senior year affect those chances?
