So your own research is not a feasible EC unless you do it in the style of a blog but there’s no way to do your own research and have it be published. The chances of that are astronomically low. You’d likely have a better shot getting into all of the ivies plus MIT and Stanford.
As for other economic related clubs there is DECA and if you are interested in a leadership position you may want to look at joining or founding a stock market club. You can use various online activities to simulate a real stock market. Look at marketwatch.com as that’s the best resource in my mind.

These are all good options and definitely check out that article. I would add that while doing all of these will help, make sure you thoroughly dedicate yourself to at least one econ related activity since admissions officers may doubt your interest in the subject if you have numerous yet light ECs related to econ. I personally just got into Duke after applying as an econ major while only having one directly related activity so don't worry too much about quantity.
