No matter what kind of essay you are writing, you need to start with a "hook," something that grabs your reader's attention. This could be a vivid description, a short story, or a quote. If you are writing an application essay, then you need to do the same, but make sure you can tie it into the body of your essay. Also, make sure you use a varying and descriptive vocabulary that will stick with your reader. Good luck, hope this helps!
I suggest starting by creating an outline before you even start writing. Think about what you want to do with this essay. What is it's purpose? Who is it addressing? What impression do you want to make on the reader? Think about these, and then create an outline to help you write it. I'm sure there are plenty online.

An outline will help keep your essay on the topic, and I would definitely make one, but in terms of the opening paragraph, it will be more helpful to pay attention to how you are going to transition and how you are going to hold the reader's attention.
