I am a rising senior, and my public high school recently began semi-solidifying scheduling (I still have time to change).
My conflict is between Calculus II (AP weighted) and German III (Honors weighted). There is no other work around; it is one or the other.
As someone who wants to major in Finance, the former seems much more appealing. However, I know colleges really like three years of a language, and I will certainly do better in German III (easy teacher).
Which should I choose? Should I contact admissions at the schools I’m interested in?
Honestly I would not contact colleges admissions offices about your high school scheduling conflicts. It would not go over well.
I would seriously look into either taking Calculus II or German over the summer either at your community college, an online MOOC /or online college, or summer high school if your school offers that or can find another online HS that offers 1 or the other class.
If you have this series of HS math already Algebra I, Geometry, Algebra 2, Pre-Calc and Calc I, I don't think it matters much to take Calc II if you are going to business school. Why? Because your 1st 2 years of undergrad B-school will be spend on core curriculum requirement courses. Each B-school does this differently buy in general you will have to take College Critical Writing, Econ (Macro/Micro), Finance (101/102), Stats (101/102), Marketing, some Business/Public Policy course, Some Law for Business course, Some principles of Management course, maybe an Information Systems class and some basic Modeling class (using Excel).
You are not going to be taking advanced finance courses until 3 or 4th year. Only then will you be using some Calculus formulae in option pricing models and other derivatives pricing. You can always take a higher math while you are in college if you need a refresher.

I would recommend choosing German III. Your calculus level is already sufficient for a Finance major, though it would give you real benefits in admissions to reach a third year of language classes. By taking German III, you may also be able to take AP German at your school or self-study for the exam. This is an easier AP than many others and can give you some useful credit for college.
Another thing to note is that though Calculus II could give your GPA the biggest boost, it would help your GPA more to score well in an honors than potentially not do as well in an AP. Hope this helps!
