Will engineering colleges like UNC still accept me?

Just based off of grades I have not taken any Ap classes and I’m about to be a junior. But as a junior I plan to take about 4 Ap classes, as well as my senior year. Do you think this will be rigorous enough for colleges like UNC to look in my direction?

Also, I am planning to take some Dual-Enrollment courses, will they help my chances?

It depends on what AP classes your school has available. If there isn’t many AP classes available, then it makes sense for your lack of APs. I do think the Dual-Enrollment courses can help. But I think extra curricular's would be a huge help.

You should talk to your counselor about that. Community colleges usually offer courses like that.

Also I found out we only have 19 which is the same amount we had last year but different classes.
