How to describe this on common app?

So for my senior capstone class, we basically have to find a NGO that solves a particular problem in our area and then interview the director of the program and ask questions about this NGO while also volunteering some. This is a multiple week long project and will end with a 10 minute presentation.

How do I describe this on common app? And what category would it be listed under

My honest opinion is to not list this on your Common App. If it's classwork, it's not a co-curricular by definition. In addition to that, interviewing the director of one NGO once also doesn't seem like an achievement worth reporting as a co-curricular regardless of the level of universities you're applying to. I could not, in good faith, tell you to include it under anything.

I recommend including this activity on your extracurricular list if helped out at the NGO more than one time. If you have done so, it will count as community service if you focus on describing the volunteering you did in your description. After you explain your volunteering role, you could add another sentence about interviewing the director for your senior capstone project. Hope this helps!
