3 Questions on Accociates/Bachelors

After completing a bachelor's degree 4-year program, I was thinking about going back to college for another 2-4 years for an associate/bachelor's degree so I could focus on extracurricular activities. The price of the college doesn't matter to me.

I am looking for the easiest major/major-minor combination, so I can stay in college and not have to put a lot of work into the program. I am good at (and enjoy) Math and (especially) History-related things and struggle with writing or reading comprehension.

My guess would be doing something along the lines of getting a degree in communications, or liberal arts, as they provide low-rigor courses and flexible degree plans. Why do you need to go back to focus on extracurriculars? It is certainly possible to be involved in them during your first bachelor's degree.
