So, in my opinion, the best activities for you would be to:
1. Start debating: like Model UN and Extempore. You have to win these and just participation wouldn't suffice.
2. Start job shadowing a local lawyer's office and learn the basics. This would also help you get a credible LOR.
3. Start a blog: Discuss the latest legislation and decisions by the court and present your criticism. Get as many subscriptions as possible.
4. Start a club in school: The club can be about legal conduct. You can conduct moot court activities.
If you get these activities done in the right way, you will be on the right path to the finest schools.

I think Model UN, Mock Trial, and Debate are really good options for you, but you need leadership positions in those or win contests.
