These EC's look great! Remember, the way you describe it on your application matters. Be sure to use accurate, descriptive yet concise descriptions for each one.

Unfortunately, a lot of students lost their 4.0 during Covid, so some admissions officers beg students not to mention Covid as an "excuse" for anything or to use it as an essay topic b/c essentially everyone went through it (though your situation is always a little different).

I also am looking at Penn state and Temple University! I may not end up applying, though, b/c my fave school may accept me before I would apply to those 2.

One thing I always tell other students is to find ways to pursue your career through your ECs. EG, my interests are horticulture and floral design, so I am doing tons of independent studies and online certificate-level classes. You could also join clubs based on those interests. Our hobbies often become who we are (especially in my case) but too many students go for the highest-paying vs. what they would enjoy doing their whole life.

Keep up the good work and remember to enjoy high school also!
