my mock trial mentor from a top law firm went to Princeton. I was wondering if getting a letter of rec from my mentor would improve my chances.

This really depends on the relationship you have with that person, not so much what school they went to. Can the mentor share insight about you specifically, not just that you were a nice person to work with, but an amazing, unique student? Do they know you well enough to give evidence that you are amazing? If you barely interacted, didn't get along, or didn't connect personally, then I would NOT advise choosing them as a recommender. Choose people who can share and give concrete examples of the person you are instead of simply choosing the smartest person you worked with, if that makes sense :)

yeah, I understand what you are saying. I am not looking to replace them for the main two recs. I am planning to ask if they could write the 1 additional letter of rec. i would say that they know me pretty well. Thanks ! Does my response change anything?
