Do colleges care about you taking the AP class, or just about the score?

My schedule will be very full, and I already have a significant number of AP and honors classes. However, there are a couple of AP language exams I was considering on taking due to the fact I have fluency in those languages. Would colleges take into consideration my AP scores on these exams even if I did not take the AP class for that exam, or any courses specifically related to that exam?

My understanding is that colleges care more about the AP class, and how well you did in it, than in the score. I'm told that some don't even look at the score until you've been admitted, if you wish to use that credit. Overall it's better to do well on the exam than not to do well, but if pressed I'd choose an A in the class over a 5 on the exam.
