Need Help for Extracurriculars!

I'm going into second semester of Junior year, and I feel my EC's are very lackluster. All I have is minimal volunteer hours at a nursing home, HOSA member for 2 years, Swimming and Diving for 2 years (vars 1 year, but got cut this year due to management shift), one volunteer event for health and fitness club, NHS, and I joined MUN this year. I have a 4.0+ GPA and a 1430 on the SAT that I think I can get up to a 1530.

I am interested in medicine, but I have no idea where to start when it comes to applying or starting new EC's. Is it over?
